Dickinson native opens city’s first bagel bar

After doing some modest market research, Mandy Wilson knew there would be a market for a bagel shop in Dickinson. Once Mandy’s Bagel Bar opened downtown next to the Evolution gym, she was surprised to see how busy the shop became.

“We didn’t expect what we walked into,” Wilson said. “We had lines out the door.”

In addition to offering bagels and cream cheese — nearly 30 types of each — the shop offers breakfast and lunch sandwiches on bagels, made-from-scratch soups, smoothies, coffee and a cooler full of beverages.

Wilson, a Dickinson native, attended cosmetology school in Rapid City, S.D., and had a bagel every day on her way to class. After moving back, she missed her daily bagel fix and started wondering if there would be a market for such a shop in her hometown.

“People coming from other places — they have this back home,” Wilson said. “Now they have it and we have the actual East Coast bagels here.”

It took six months to remodel the space where The Medicine Shoppe used to be next to Evolution, at the old Sax Motors Quick Lube building, but Wilson and her family did most of the work themselves.

“I have mostly family working for me,” Wilson said. “My mother-in-law, she did all the texturing on the walls. I put the floor in.”

Wilson wanted the shop to look rustic and homey, from the monochromatic walls to the dining room-style tables, and feels she accomplished that with the decorating and furniture purchased from neighboring Furniture City.

The bagels start out on the East Coast. The dough is made in New York, but proofed and baked right here in Dickinson. All of the cream cheeses are mixed at the shop.

Those who are indecisive can try the cream cheese flavors with little disposable spoons, just like at an ice cream shop.

“What if you get it and you don’t like it — that’s not good,” Wilson said. “We want you to come back and eat what you like.”

With the success of the downtown store, Wilson and company are getting ready to plan a second location in either north or west Dickinson — depending on the developments in those areas.

“We have outgrown this the day we opened,” Wilson said.

Space is limited at Mandy’s Bagel Bar, so a second location would be better equipped to handle to-go orders, deliveries and add an espresso bar.

Anyone who wants a to-go order can call a day ahead to pick up their order when requested.

People who visited the shop when they first opened might have been a little daunted by the wait — as were the staff — so they’ve been working to streamline the process.

“We’ve balanced things out to where it gets people in and out faster,” Wilson said. “You don’t have to come in and wait 20 minutes anymore.”
