Dean Karsky stops to greet a dairy cow Wednesday afternoon while doing a walk-through in the barn on his Dickinson dairy farm. Karsky owns one of a dwindling number of dairy farms that remain in North Dakota, which is the 35th largest milk-producing state in the nation, according to the Midwest Dairy Association. The association estimates that The Peace Garden State produces 40 million gallons of milk, even as the state’s total number of dairy producers is on the decline.
