Visitation for Eileen is 3 p.m. to 6 p.m. Monday, Jan. 14, at Stevenson Funeral Home in Dickinson.

Eileen Vance Christensen was born Sept. 11, 1917, on the family farm south of Halliday to Frederick and Antonia (Decker) Christensen. The family moved to a farm north of Dunn Center in 1931.

During her youth, Eileen was an avid horse person; she told stories of riding horseback to confirmation class in Dunn Center and herding cattle.

She married Joseph Remsing on March 27, 1940, in Manning. They farmed northeast of Dunn Center until Joe’s death on Nov. 14, 1968, when Eileen moved to Bismarck and attended beauty school.

Eileen owned and operated the beauty salon at North Dakota State University in Fargo until her retirement in 1983 when she moved to Omaha, Neb.

In 1987, she moved to Arlington, Texas. In 2009, Eileen moved back to North Dakota and has lived at Sheyenne Crossings in West Fargo until her passing.

Eileen was a creative person; she sewed, knitted, crocheted and did embroidery. In later years, she painted pictures and designs on T-shirts.

She loved to bake and in addition to the usual items, the family in particular remembers her caramel rolls, lefse, fattigmand and spudnuts. She was also an avid reader and enjoyed traveling and seeing new places.

Eileen is survived by her four children, Rodney Remsing (Aljean), Franktown, Colo.; Miles Remsing (special friend Linda Niles), Sarasota, Fla.; Lynn Remsing (Cyndy), Arlington; and Vicki McIntyre (Douglas), Horace. She is also survived by daughter-in-law, Marjorie Flaskey Remsing, Appleton, Wis.; nine grandchildren, Tenley Sommerfield (Thomas), Parker, Colo.; Chad Remsing, Franktown, Colo.; Dawn Remsing (Bart Pfankuch), Rapid City, S.D.; Stacye Bevelacqua (Anthony), East Grand Forks, Minn.; Jody Remsing (Matthew Stengle), Eagan, Minn.; Tiffany Remsing, New Zealand; Justin (Jazbeen) Remsing, Reno, Nev.; Cole McIntyre, Horace; and Jena McIntyre, Horace. Eileen is survived by five great-grandchildren, Lucy Bevelacqua, Anna Bevelacqua, Samuel Bevelacqua, Matthew Bevelacqua and Jonas Stengle.

Eileen was preceded in death by her husband, Joseph Remsing, in 1968; parents, Fred and Antonia Christensen, her four sisters, Violet (Louie) Rohde, Marie (Melvin) Hellickson, Virginia (James) Williams, and Delores (Alvin) Nordsven; her five brothers, Clarence (Kathyrn), Allen (Elsie), Curtiss (Hazel), Dorn (Ruth) and Keith (Corrine).

The family asks that in lieu of flowers and memorials that contributions in her name be made to Hospice of the Red River Valley at 1701 38th Street S., Suite 101, Fargo, ND 58103.
