Porter to appear on Today Show

Dickinson native Mercedes Porter is taking her love of cooking and baking to New York City where she will appear on a segment of NBC’s Today Show.

The “Top Holiday Cookies” segment is scheduled to air during the 8 a.m. EST hour on Wednesday. The segment will feature each of the morning’s five hosts with one amateur baker who makes a favorite holiday cookie.

Mercedes, the daughter of Dan Porter of Dickinson and Lulu Porter of Bismarck, learned that Matt Lauer was looking for a variation of a ginger spice cookie.

“I have a recipe from my great-grandma and she, of course, gave it to grandma who circled it through the bridge club,” Mercedes said from Minneapolis, Minn. “Eventually it passed down to me.”

The Ginger Molasses Spice Cookies were described as particularly aromatic and flavorful, due to a combination of cloves, ginger and cinnamon, and they are buttery, soft and chewy.

Submitting the recipe to the producers, she received a phone call indicating she was a finalist. She kept her hopes up until the second call came, saying she was a winner.

“It was hard to contain my excitement,” she said.

Mercedes is flying to New York City with her mother on Sunday. She has practiced making the recipe several times to make sure her notes are exact. She expects to explain why the cookie is extra special while stirring a batch of cookies.

Mercedes grew up in Bismarck and completed her undergraduate studies at the University of Minnesota-Twin Cities. She is a dentist by profession and a faculty member at the University of Minnesota School of Dentistry. She is married to Tyler Peterson, also a dentist.

She spends much of her free time baking and is passionate about using her baked goods to spread cheer and kindness.

“I grew up being in the kitchen with mom and both grandmas,” she said. “As soon as I could hold a spoon, I was stirring cookie dough. That’s where my love of cooking and baking came from.”
