Pickling pike as simple as it sounds

BISMARCK — Who wouldn't want to try pickled state fish? In North Dakota, pickling northern pike can be a smooth process.

The canning process doesn't involve actually cooking the northern pike, and starting with frozen fish is recommended.

Ingredients per pound of pike
Brine:

  • 1c kosher salt
  • 4c water

Pickling solution:

  • 1c water
  • 2c apple cider vinegar
  • 1/3c sugar
  • 2 tsp pickling seasoning
  • 2 bay leaves
  • Peel of lemon
  • 1 medium red onion, thinly sliced
